Hej! In the countryside of Sweden in the 30’s and 40’s, when the family slaughtered the pig around Christmas time, they would make meatballs. Thanks to IKEA, we have made it an any day affair around the world. This meatball recipe is by Dalie Svensson (born 1902) Lagan, Småland, Sweden, date December 4th, 1942. Cheers!
Ingredients:
- 2 kilo ground pork meat
- 4 dl breadcrumbs
- 4 dl boiled mashed potatoes
- 1 bottle of soda-water (33 centiliter)
- Boiled, chopped yellow onion (2-3 medium sized)
- 1 teaspoon potato flour
- 1 teaspoon salt
- 1 teaspoon white pepper
- Butter (or oil) for frying
Instructions: | |

1) Put meat in large mixing bowl. Add breadcrumbs, potato flour, salt and white pepper. Then add soda-water. | |
2) Boil potatoes. After cooling, pass through a potato ricer. | |
3) Shred onions. Then boil shredded onions until just softened, 3 minutes. Strain water out of the onions and add to the meat bowl. | |
4) Mix with spoon at first, then use your hands to ensure all ingredients are properly mixed in evenly. Take about a tablespoon size of meat and with wet hands (cold water) roll your meatballs tight enough so they don’t fall apart. | |
5) Fry meatballs in a hot skillet with butter (original recipe). | |

Tips and Ideas
* Meatballs can be served with any kind of your favorite gravy.
* Swedish tradition is that meatballs are served with potatoes, mashed, boiled, oven roasted and lingonberry sauce.
* Experiment! Spice up your meatballs with garlic, chili, black pepper, ect. Cheers!
